These are easy and awesome! We make these every year when strawberry season starts!
3/4 cup flour
1/2 TBS sugar
1/4 tsp baking powder
1/4 tsp salt
1 cup milk
1 egg
1/2 tsp vanilla
1 TBS melted butter or oil
Mix. Heat a skillet or frying pan to about medium high. Coat with Pam. Pour some batter, which will be very thin. Lift the pan and swirl the batter around in a circle til it's spread as thin as it can in the pan. Let it cook til the sides start curling up, a minute or two. Then flip and cook maybe another 30 seconds or so. That's it.
For strawberry crepes, wash, stem, and cut your strawberries up and sprinkle some sugar (to taste) over them to get them juicy and sweet. Put some strawberries in the center of your crepe. Roll it up. Top with sour cream or cool whip and sprinkle with a little cinnamon! Yum!
