Semolina Pizza Crust

Semolina is a flour made from durum wheat.  It is yellow in color and often used in pasta making.  It's courser than regular flour and has a great flavor.  It was one of my favorite pizza crusts to make back when all my girls lived at home and we had pizza night every Friday night.  You might have to look for it in the bulk section or the health food section at the grocery store.  Makes one 12" pizza crust.

1 cup water
1 tsp honey or sugar
1 or 2 TBS olive oil
1 cup semolina flour
1/2 cup whole wheat flour
1/2 to 3/4 cup unbleached flour
*you can sub out white flour for the wheat flour if you want to.
1 tsp salt
1 TBS yeast

Load in bread machine.  You can run the full dough cycle or take it out after about 20 min. and let rest 5 minutes then shape on pan.  Add toppings and bake 12-15 min. at 450°
You can double this recipe in the bread machine if you need more than one crust.
